Romaine lettuce with feta cheese, tortilla strips, and lemon vinaigrette dressing
Entree Course
Option One: Pork Tacos
Soft corn tortillas filled with shredded achiote seasoned pork, Monterey Jack cheese, and fresh cilantro. Garnished with pico de gallo and sour cream. Served with red rice and black beans.
Option Two: Pulled Pork
Slow smoked Willow Creek Farms pork shoulder. Served on Texas toast with bbq sauce, chipotle potato salad, green chile pinto beans, corn cake, pickles and onion.
Option Three: Blackened Catfish
Fresh catfish fillets blackened in a coast iron skillet. Served with pickled red onion, smoked jalapeno and black bean purees, guacamole, fresh lime, black beans, red rice.
Option Four: Thai Vegetable Fajitas
Carrots, broccoli, bok choy, red onion, red cabbage, red pepper, garlic and ginger tossed in a Thai dressing and seared in a cast iron skillet. Garnished with pico de gallo and roasted peanuts.
Dessert Course: Traditional Almond Flan
